Ethiopia Aricha

Processing natural coffee is a tricky thing to get right, but mills in Ethiopia have been doing it this way for centuries. The process starts with perfectly ripe cherries being delivered to the local mill for grading. They are then dried on raised beds to ideal moisture content, and finally hulled before bagging and shipping.
