Decaffeination begins by submerging unroasted coffee in heated, filtered water. This extracts the soluble material from the beans. The water solution is then put through a carbon filter to separate the caffeine while retaining the flavour and aromatic compounds. New beans are then placed in an immersion tank with the caffeine-free solution, which absorbs the caffeine but not the flavours and aromatic compounds, preserving the taste.
