The latest release from our ongoing collaborative Filter sourcing project with our friends Pigeon Whole Bakers, which celebrates our shared love for refined and elegant flavours. Staying true to our mutual love of washed coffees, we have selected a beautiful lot from Honduras called Las Botijas.
Based in west-central Honduras, Abel Giron runs a meticulous farming operation, where his 10 permanent pickers hand pick and sort cherries. This coffee presents a complex and textural profile, with notes of Apricot and Chocolate. Drawing on the pastry expertise of the PWB team, our final tasting note is Kouign Amann, a semi-sweet caramelised pastry that perfectly compliments the cup's depth and balance.
A fruit-forward yet clean expression of a Honduran coffee, with rounded sweetness and a playful apricot-like acidity.
